You may have heard the word 'Microgreens' here and there, you've maybe even seen what look like mini greens or sprouts at the grocery store.
But what are they and why are they important? Well, they are in a class of their own - packing a big punch with taste and nutritional value. Not to be confused with sprouts, Microgreens have leaves and you don’t eat the roots. There are different kinds ranging from radish to sunflower to broccoli to buckwheat.
Mircrogreens are rich in many different vitamins and minerals. My husband likes to say that if you're not a fan of vegetables, you can garnish your food with microgreens and still get great nutritional value. I think they are tasty to snack on plain and I also like to add them to just about everything!
They are great in a salad, as a garnish, sprinkled in a taco or in a sandwich. The sky is the limit with these tiny but mighty greens!
